eVala Restaurants offer a mixture of traditional Dalmatian and Croatian cuisine with a modern twist. They are very interesting, as they feature two unique locations. These two unique concepts blend together in their indigenous food and modern approach.
The Story
Restaurant eVala 1903 offers a unique cuisine, under the leadership of Chef Ivan Temšić. Located on the historic Matejuška, they draw inspiration from the local heritage of Split. Their beautiful location reflects the rich history of Tezje, and the year 1903 in the name of the restaurant commemorates the marriage of the famous Roko and Cicibela, who got married not far from our location.
The name of our restaurant "eVala 1903" is a combination of several important things. The word "evala" itself is an old Split word meaning "good luck, thank you, good day", while "Vala" means a sea bay or waves.

The dishes at eVala 1903 are created to combine Dalmatian and Split cuisine together with a modern view of the preparation, side dishes and arrangement of the dishes served in the restaurant. The portions are rich in size and it does not follow the typical "fine dining" trend. They feature a daily offer of a la carte dishes that will appeal to local guests, but also to foreigners who want to try a mix of traditional and modern cuisine.
Restaurant eVala Rustica - Poljana Tina Ujevića 2, Split
eVala Rustica is their small tavern in the very center, where you can taste the traditional homemade dishes. Some of the traditional dishes you shouldn´t miss are ofcourse Pasticada, Tartufanci, Frigadura, and many others. Enjoy their wide selection of fish, pasta, meat but also grab a traditional drink. TeraGino by Aura is always a good choice - a combination of teranino - a traditional Istrian liqueur and gin.
