First of all, wash the asparagus, separate the soft part of the stem with the tips, and break them into shorter pieces.

Briefly fry the finely chopped onion in the oil. Add asparagus, salt, and pepper. When the asparagus becomes soft, add beaten eggs, mix a little, and bake until the end.

You can serve it with bread and, if desired, sprinkle the frittata with grated goat or sheep cheese or even fried pancetta, depending on whether you eat meat. It’s easy to make and even easier to eat.
