Istrian pasta Fuži with pork and truffles
Fuži is a traditional Istrian pasta served with various sauces depending on a chef's choice. The dough is made by combining flour, eggs, oil, and salt, then rolled out thinly and cut into 3-4 cm wide noodles. Cut the noodles diagonally to obtain rhomboid shapes. Then, to create the appearance of a bow, the two ends of each rhombus are wrapped around one another and squeezed in the center. Fuži goes perfectly with pork sauce in bianco and grated truffles on the top. If you like pasta, you will enjoy making and eating fuži. Try out this recipe with meat and truffles.
Ingredients for Istrian pasta Fuži with pork and truffles:
- flour
- eggs
- salt
- olive oil
- pork
- onion
- carrot
- pepper
- wine
- truffles
Let's mix some ingredients: flour, salt, eggs, oil, and a small amount of water. Make a smooth dough and let it rest for about 30 minutes. Roll out the dough thinly and cut it into squares (about 4x4 cm in size). Take one square and fold it by joining the two diagonally ends. Once wrapped around one another, squeeze in the center for obtaining a box-shaped pasta.
While you wait for the water to boil for the pasta, take a pan, heat a few tablespoons of olive oil, and put in fillets of pork (you can use another type of meat). Fry it until brown, then add salt, pepper, a little butter, garlic, and rosemary. Pour the sauce over the meat in the pan, then add a small amount of brandy. When the meat is ready, take it out of the pan, turn off the heat, and add a small amount of truffle oil and truffle paste to the sauce. Mix that up, put the meat back into the pan, pour some more sauce, and it's ready to serve with homemade fuži. Enjoy your meal!
