Recipe for Croatian Stuffed Peppers (Punjene Paprike)
Ingredients:
6 medium-sized bell peppers (preferably yellow or green)
500g (1 lb) ground beef or a mixture of ground beef and pork
100g (½ cup) uncooked white rice
1 large onion, finely chopped
2 cloves garlic, minced
1 egg
2 tablespoons fresh parsley, chopped
1 teaspoon paprika
Salt and pepper, to taste
2 tablespoons olive oil
500ml (2 cups) tomato sauce
500ml (2 cups) beef broth or water
1 bay leaf
Instructions:
Prepare the Peppers:
Cut the tops off the bell peppers and remove the seeds and membranes inside. Rinse the peppers and set them aside.
Cook the Rice:
In a small pot, cook the rice until it is half done (it will finish cooking inside the peppers). Drain and let it cool slightly.
Prepare the Filling:
In a large bowl, combine the ground meat, partially cooked rice, chopped onion, minced garlic, egg, parsley, paprika, salt, and pepper. Mix everything well until all ingredients are evenly distributed.
Stuff the Peppers:
Fill each bell pepper with the meat and rice mixture, pressing it down gently to ensure they are well-packed. Leave a little space at the top to allow the filling to expand during cooking.
Prepare the Sauce:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the tomato sauce, beef broth or water, and bay leaf. Bring to a gentle simmer.
Cook the Stuffed Peppers:
Carefully place the stuffed peppers into the pot with the sauce, standing them upright. If needed, add more water or broth to ensure the peppers are mostly submerged in the liquid.
Cover the pot and let the peppers simmer gently over low heat for about 1 to 1.5 hours, or until the peppers are tender and the filling is cooked through. Occasionally baste the peppers with the sauce to keep them moist.
Serve:
Remove the bay leaf from the sauce. Serve the stuffed peppers hot, generously ladling the tomato sauce over each portion. They can be enjoyed on their own or with a side of mashed potatoes or crusty bread to soak up the delicious sauce.
Stuffed peppers are a true comfort food, and their delightful flavor will transport you to the charming kitchens of Croatia. Enjoy this traditional dish with your family and friends for a taste of Croatian hospitality and culinary tradition.
